The production of maple syrup started about 10 years ago with an idea from Allan Bennett of Kamsack. He, along with four others, started collecting maple sap from Manitoba maple trees in the local area.
They started with 1,000 taps and today have expanded to 5,000 trees. Three on the team collect the sap and Allan does the evaporating. It takes 40 gallons of sap to produce one gallon of syrup.
This syrup has a stronger maple flavour compared to that made in eastern Canada. It is just as sweet but has a definite Saskatchewan flavor.
